The Four Kitchen Commandments

Cold-Pressed Oils Only
Kachi ghani mustard oil, cold-pressed sesame oil, and artisanal A2 bilona desi cow ghee. We never use hydrogenated dalda or reused frying oil.

Stone-Ground Whole Spices
Cumin, coriander, black cardamom, and Kashmiri chilies freshly crushed each morning. No synthetic essence or chemical color enhancers.

Hand-Rolled Cast Iron Rotis
Stone-milled whole wheat flour kneaded with water and salt, tossed over heavy cast-iron tawas and puffed lightly over open flame.

Slow-Simmered Clay & Brass Pots
Lentils and gravies cooked with gentle, prolonged patience so flavors meld harmoniously without destroying delicate nutrition.
